Hazelnut Chocolate Brownie Recipe

There are brownies… and then there are proper chocolate brownies.

Developed by our very own Byron Bay Chocolate Co team, this brownie recipe is rich, fudgy and packed with chocolatey goodness. After plenty of very important taste testing, we can confirm they’re every bit as good as they sound.

Bake these brownies for a cosy weekend at home, a dinner party dessert or simply because the chocolate cravings have kicked in.

They are made with melted chocolate, cocoa, sour cream and a jar of Byron Bay Chocolate Co Milk Hazelnuts stirred through the batter. This recipe has everything we love in a brownie: a crackly top, soft centre, rich flavour and little pieces of chocolate in every bite.

The sour cream keeps the texture of these brownies beautifully moist, while the melted chocolate and cocoa powder create a deep chocolate flavour. The best part? You can make it your own by adding your favourite Byron Bay Chocolate  – we chose Milk Chocolate Hazelnuts

Serve them warm with melted chocolate, a dusting of icing sugar or a scoop of vanilla ice cream.

Ingredients

  • 60g unsalted butter

  • 145g chocolate pieces

  • ¼ cup plain flour

  • 2 tablespoons cocoa powder

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 3 eggs

  • 1 teaspoon vanilla

  • 1 cup caster sugar

  • ½ cup sour cream

  • 1 jar, approx. 200g Byron Bay Chocolate, chopped or crushed

 

Method

Preheat your oven to 160°C.

Grease and flour a 20cm square baking pan, then set aside.

Melt the chocolate pieces and butter together over a double boiler until smooth. Once melted, remove from the heat and allow to cool slightly.

In a separate bowl, whisk the eggs, caster sugar and vanilla for about 1½ minutes, or until light and slightly thickened.

Add the melted chocolate mixture to the egg mixture and whisk on medium speed for around 30 seconds.

Sift together the plain flour, cocoa powder, baking powder and salt. Add the dry ingredients to the chocolate mixture and beat on low speed for 10 seconds, then on medium speed for another 10 seconds.

Add the sour cream and beat on medium speed for 10 seconds.

Stir through your chopped or crushed Byron Bay Chocolate Hazelnuts until well combined.

Transfer the mixture to your prepared baking pan and bake for 30-40 minutes, or until just set. Test with a skewer – for a fudgier brownie, you want a few moist crumbs still attached.

Allow to cool slightly before slicing.

Serving idea

For an extra delicious finish drizzle your brownies with melted chocolate. Or add a little icing sugar, serve with cream or ice cream, and enjoy while they’re still slightly warm.

Hot Tip

Don’t overbake your brownies. They’ll continue to set as they cool, so taking them out when the center is still slightly soft will give you a rich, gooey texture.
