
To celebrate the launch of the new Exquisite Range, we sat down with RenaeO’Connor, General Manager of Byron Bay Chocolate Co, to talk inspiration, flavour, and why this collection feels like a true expression of Byron Bay.
Q: Renae, what makes the Exquisite Range so special?
Renae:This range feels like a love letter to our home, Byron Bay. Every jar captures something about where we live: the colour, the vibrancy, the energy. It’s distinctive.
The most playful collection we've created to date! There's crunch, creaminess, fruit, nuts, dark, milk, white…. it's layered and textural. We wanted to bring something new to the table.

Q: What inspired the flavours?
Renae: I wanted something gift-worthy but still joyful. Not too serious. Byron Bay isn't traditional – it's colourful, creative and a little unexpected.
The flavours reflect that. Tropical mango with raspberry. Earthy matcha with strawberry. Beachy Black forest, the classic with a coastal twist.
Q: Who is this range for?
Renae:Chocolate lovers! People who appreciate quality and an experience that delivers a minibreak in their day. It works for corporate thank-yous, celebrations, or when you just want to give something special to someone or yourself.
Q: What can someone expect flavour-wise?
Renae: Contrast and surprise.
There's the tropical brightness of Mango Mojo™, the luxurious crunch of Moon Macadamias®, the calm earthiness of Matcha Berry™, and the bold intensity of Strawberry Splash™.
Then you have Berry Harvest®, Drifters® Mixed Nuts, Beachy Black Forest™, and Migaloo Macadamias®.
Every jar is different but they all share the same foundation: our signature couverture chocolate and attention to detail.
Q: You often talk about real chocolate. How does that show up here?
Renae:We only use couverture chocolate. That's non-negotiable. Best eaten at room temperature of course. It gives that smooth mouth feel and depth of flavour you can't replicate or use inferior ingredients to substitute. Authenticity is important to us and a foundational part of why we have been in the chocolate business for so long.
We roast our nuts in-house and use freeze-dried fruits for vibrant flavour without anything artificial.
For me, "exquisite" isn't about being flashy. It's about doing things properly.
